Mozzarella tour
One of the most charatheristic services is the Mozzarella Tour.The Mozzarella Tour will be executed in Agerola, a little town famous for its cheese, located on Lattari Mountains.
The dairy farming is, since antiquity, one of the most important resources of Agerola, thanks to cattle farming and huge production of milk, it could produce a thick quantity of dairy products like milk, Fior di latte or mozzarella, caciocavallo, ricotta, etc.This tour starts with the making hand demostration of the Fior di latte cheese.
The principal stages of processing are:
1. The heating of the milk
2. Its coagulation through the addition of calf rennet
3. Addition of the whey
4. Rupture and subsequent maturation of the curd
5. Addition of hot water during the spinning
6. Docking
7. Water cooling
8. Salting
9. Packaging
After the demostration there will be a tasting of Fior di latte and other local products like cold meats, taralli and wine. Who will be interested will have the oppurtunity to buy this products.
The Tour has lasting of about 1 hour.
Days available are from Monday to Saturday.
Morning: from 11.00 a.m. to 1.oo p.m.
Afternoon: from 3.00 p.m. to 6.00 p.m.
